How to prepare Mbatata (Sweet potatoes) with mince meat
INGREDIENTS
400g raw minced meat
2 large sweet potatoes
1 cup cooked, sieved tomatoes
3 tomatoes (chopped)
1 Table spoon of vinegar
2 onions (chopped)
1 cup milk warmed
Breadcrumbs
Salt
Pepper
Oil for frying
1 Table Spoon of flour
2 Table spoons of margarine
3 Table spoons of grated cheese
PROCEDURE:
1 Peel and slice the sweet potatoes and fry until brown
2 Remove from the pan and keep warm
3 Fry the onions until soft add the meat and fry until cooked,
4 Add the sieved tomatoes, chopped tomatoes, vinegar and season to taste
5 Cover and simmer gently for about half an hour
6 Grease a large dish and arrange alternate layers of sweet potato and meat in it
7 Make a cheese sauce by melting with margarine, add in flour and cook for a minute
8 Add the warmed milk little by little, keep on stirring all the time until all the milk has been used
9 Remove from the heat and stir in the cheese, then pour this over the meat
10 Sprinkle the breadcrumbs over the sauce and bake in oven for ½ hour and then serve warm.
